Champagne for My Real Friends...

...and real pain for my sham friends.

This pithy saying is on the double-sided sign at a local liquor store. While not the most sweet-spirited motto to live by, I like the first part.

In honor of the new year, or amateur night as I like to call it, here are a couple of cocktails for those of you not inclined to drink your Champagne straight:

Kir Royale

Splash of Chambord (or Creme de Cassis)

Just pour into your flute, and salute!

Black Velvet
For those beer lovers among us...

2 parts Champagne
1 part stout, such as Guinness or Beamish

The standard method is to pour the stout into a flute first, then carefully layer the Champagne on top by slowly pouring down the side of the glass.

However, the traditional method of the Black & Tan or, more appropriately, the Snakebite calls for pouring the Champagne first and then inverting a spoon over your glass. Pour the stout slowly over the back of your spoon, so it layers on top of the Champagne.

Champagne Cocktail
...what I'll be having tonight

1 small lump sugar
Dash or two of bitters (preferably two)
Champagne to fill
